Knife escape priority: flee, barrier, then engage
The correct priority when facing a knife is first to get away, then if you cannot flee to put something between you and the attacker (or pick up an object), and only as a last resort to attempt to control the person, accepting that you will likely get stabbed or sliced in the process.
