A possible ethical objection is that reducing things like legal systems or religion to language tokens is wrong because words are just pointing at something beyond them, and arguably that 'something beyond words' will also be beyond the grasp of AIs—as the Bible says 'the word was made flesh' and the Tao Te Ching says truth that can be expressed in words is not absolute truth.
