Meat Consumption Spikes at Exit From Poverty

Meat consumption rises sharply at the transition out of poverty (when people can finally afford meat) rather than scaling with continued wealth increases; beyond reaching the middle class, additional wealth has less and less impact on meat quantity, and the wealthiest are increasingly choosing to consume less meat.
