Calcium and magnesium, while both mineral ions, do not do exactly the same job in coffee extraction; having the same quantity of calcium in one water as magnesium in another will produce different tasting cups, with calcium generally being preferable as the primary ion at slightly higher levels and magnesium preferable at lower levels.
