Emerging economies, where most future meat demand growth will occur, can leapfrog directly to efficient, cleaner, safer alternative protein production methods because they lack the inertia of sunk assets in industrial animal agriculture infrastructure—much as regions leapfrogged landlines to go straight to cell phones.
