Trial and error (tinkering) has a really positive asymmetry: the upside is potentially unlimited (discovering something genuinely good) while the downside is bounded (you simply don't lock in the gain and move on), making it superior to top-down design.

Elon Musk inspires many people because he takes on really big audacious tasks and provides an example for people to think bigger, and while a corner grocery store owner may work just as hard or harder than Musk, people with certain education or circumstances don't get the chance to think as big and so their outcomes aren't as big.

In trial-and-error, the downside is minimal (you simply don't adopt something that doesn't work) while the upside is maximal (discovering something genuinely good), but a chemist's top-down approach trades off limited upside for potential massive downside if the theory-based approach fails.

Nassim Taleb's Incerto series (consisting of Fooled by Randomness, The Black Swan, Antifragile, The Bed of Procrustes, and Skin in the Game) is written in a timeless way with simple concepts and is far more valuable than anything on the bestseller list; one should reread Taleb's work rather than read most other books.
